Why I Cook: Chef Scott Conant

The celebrity chef just wants to be a part of the community

It’s not every day that one of the most recognized chefs in the country ventures into the Las Vegas ‘burbs to open a restaurant. But for award-winning restaurateur and Chopped judge Scott Conant, opening his new Italian outpost Masso Osteria at the more locals-focused Red Rock Casino Resort just made sense.

“I’ve had restaurants here over the last eight years or so. We’ve done a lot of work in the community and we’ve worked with a lot of different people,” Conant tells Vegas Seven. “The one thing that I’ve realized about Las Vegas is that it is very community centered. Las Vegas is all about taking care of Las Vegas. I’d love to be part of that.”

Being a part of something is what kicked off Conant’s love for cooking in the first place. Once he started cooking at 15, he was hooked. “I walked into that kitchen and I felt that same camaraderie, that sense of team, and I just kind of fell in love with all things Italian-related.”
