Giada De Laurentiis updates the traditional (if yawn-inducing) Chicken Cacciatore at her first restaurant, Giada, with a catchy new look and an addictive new taste. The chicken is roasted whole in a moist spice rub (smoked paprika, dried oregano, freeze-dried tomato, freeze-dried red pepper, toasted fennel seed and cabernet salt), then presented to the table before being whisked back to the kitchen, where it is portioned and flash-fried, and the pan veggies (tomatoes, onions, peppers) become a zesty, chunky sauce.
