Chef Beni Velazquez’s new coffee spot Republic Café & Kitchen in the Desert Shores community offers what may be the most interesting take on French toast in Las Vegas. The chef starts by soaking thick pieces of toast in flan custard, then briefly pan-sears the bread before baking it in the oven. As the custard cooks, it becomes infused in the bread itself.
