They travel to countries close to the equator to select cocoa beans, which they import and use to create different varieties of dark chocolate. The difference in each nation’s product is amazing. And because all of their chocolates contain between 70 and 74 percent cacao—and no other ingredient except coconut palm sugar—they actually qualify as health food under FDA standards.
