“Timon Balloo” are two words that make us ridiculously giddy. They make us brave the heat and park ourselves at Sugarcane Raw Bar Grill at The Venetian, where we happily stuff our faces with oysters, crudo and various bar snacks, paired with rum cocktails and other signature libations. The chef responsible for all this is the aforementioned Mr. Balloo, who hails from Miami and comes with James Beard Foundation bona fides. So if you hear us humming “Hakuna Matata” or “Bare Necessities” in between half-shell slurps, pull up a stool alongside and you’ll have no worries for the rest of your days.
