Light Group and executive chef Brian Massie are known for helming the city’s most “vibey” dining establishments, including Stack in The Mirage and Fix in Bellagio. But this fall, all eyes—and mouths—will be on Summerlin when the group’s Hearthstone Kitchen debuts at Red Rock Resort. The concept is shared plates (seafood and vegetable forward), with 60 percent of the menu coming in cold, including something called “Crabby Snacks,” steak tartare and an elaborate crudité served in a hand-carved log. On the hot side, Massie says the action emanates from two massive wood-burning ovens anchoring the open kitchen, along with a rotisserie.
