As we went to press, Omae was preparing to cook his first dinners in Las Vegas—but he’s already the most exciting chef operating outside of a casino. The man who won a Michelin star at Tokyo’s Morimoto XEX opened his 12-seat restaurant in June, but only for lunch as he awaited his liquor license. But the feasts he put out were as exquisite as anything you’d find on the dinner menus of top Strip restaurants: three-layer vegetable soup, a duo of aspics and a super-rich tempura, just to name a few. Moreover, he cooks the meal almost entirely by himself. Expect him to put the same attention to detail into his multicourse dinners, which will reportedly cost $100 through this month and $150 thereafter. 3650 S.
