Middleton’s Las Vegas career has been a delicious one to follow. From his time working in the kitchen at Wynn’s now-shuttered gourmet restaurant Alex, to his days interpreting Scott Conant’s Italian classics at Scarpetta at the Cosmopolitan and through his elevation of the menu at locals’ favorite Marche Bacchus, he’s consistently wowed us since arriving here in 2005. His most recent task has been to oversee one of the most anticipated restaurant openings of the year, under the exacting standards of his boss Daniel Boulud, and he’s done it flawlessly from Day One—whether it’s constructing one of the gourmet burgers or a duo of Tunisian lamb.
