Although the Strip has had its fair share of upscale Mexican restaurants, off-Strip we’re limited to mostly taquerias. Which is not to say those holes-in-the-wall aren’t good, but occasionally we’d like a fancier taco. Chicago native Mercadito delivers just that with its version of market-driven Mexican fare, along with grown-up ingredients and flavors, at Red Rock Resort. The variety of guacamole alone—traditional, mango, pineapple and bacon—tells you this isn’t your typical avocado mash. Tacos are mandatory, but are rendered more impressive by how they’re treated, as in the Baja-style fish taco (beer-battered mahi mahi with chipotle aioli and zesty slaw) or the pancita (dry-roasted pork belly dressed with grilled peach salsa and crunchy chicharron). 702-979-3609,
