Michael Mina has been delivering great restaurants to the Strip since Aqua (now Michael Mina Restaurant) opened in Bellagio in 1998. His latest venture, on the second floor of Aria, may be his simplest effort to date. Meant to replicate a 1920s Paris bistro, Bardot is elegant, replete with dark wood, brass and glass. The menu focuses on such French classics as steak frites, charcuterie, raw seafood and a simple baked chicken. With few frills behind which to hide, the team has to rely on exquisite technique, something they have no trouble executing.
