Eating organ meat of any kind can be intimidating to many. But for some reason, testicles tend to make people even more squeamish than other organs. Still, a few brave chefs are now serving them, including Glutton Downtown. But our favorite is served at Searsucker and goes by the name Cowboy Caviar. The seasoned fried calves’ gonads are so tender (stay with us here!) that they melt in your mouth (hang in there!), and are accompanied by fried carrots and greens and a delicious sweet onion jam (phew). Come on, show some balls and just put ’em in your mouth!
