Gnudi is actually a member of the pasta family. But the version served at this trendy new Fremont East restaurant stretches that definition. Made with ricotta cheese and baked six to a pan, they arrive at your table so piping hot you can literally spread them on the accompanying cranberry and walnut crostini. As they cool, however, they take on a more pasta-like consistency. They’re great either way, complemented by smatterings of truffle honey and fig jam.
