Mixologist Juyoung Kang, a former Comme Ça bartender and Philadelphia native, has flown the Strip and alighted downtown at Commonwealth, opening Nov. 16. Like the East Coast-style cocktail bar itself, her debut menu is a marriage of old and new: classic techniques, new points of view, time-tested spirits and fresh ingredients. Inspired originals mingle with refined classics (think Sidecars and French 75’s) on a two-part menu (“Common” and “Wealth”). “Depth Chargers,” for example, see beers spiked with shots of one or more complementary liqueurs, while a list of beer cocktails and punch bowls capitalizes on two of the industry’s hottest trends. In crafting cocktails for the common man and wealthy man alike, Kang, of course, also looks out for the ladies. The Liberal Lady—a kinda-sorta bourbon fizz—tempts whiskey-wary females to get in the game with honey-sweetened whiskey and lightly effervescent Prosecco. No, that one’s not a classic cocktail. Well, not yet.
In a mixing tin, combine 2 ounce Wild Turkey American Honey, ½ ounce green Chartreuse, 1 ounce fresh lemon juice and ½ ounce egg white. Dry shake (no ice) for 10-15 seconds. Add ice, cover and shake again. Strain over fresh ice into a 10-12 ounce chilled Collins glass. Top with Mionetto Prosecco and garnish with a lemon twist.
