Dishing: Reuben Egg Rolls, Holsteins

The formula for a really popular appetizer is something like “hand held + deep fried + cheese = moneymaker.” The burger-and-beer joint at the Cosmopolitan takes it one step further by combining a couple of different concepts: the egg roll and the Reuben sandwich, and executes it really well. Puffy egg roll wrappers are the perfect delivery vehicle for tender corned beef and sauerkraut. Things stay neat with a side of Russian dressing in which to dip the fusion appetizer. $12, in the Cosmopolitan, 698-7940, HolsteinsLV.com. Read more »

Dishing: Choked Pig Pizza, Slice of Vegas

The pizza shop in the Shoppes at Mandalay Bay just got creative with its latest menu additions. The Choked Pig piqued our interest with its curious name alone, but kept our attention with its ingredients. The pie is topped with pesto aioli, mozzarella cheese, bacon and a mix of artichokes (oh, we get it now!). Chopped fresh basil and whiskey sour cream (not to be confused with a cream that tastes like a whiskey sour) highlight the earthy flavors. 12-inch $19, 18-inch $30, in the Shoppes at Mandalay Bay, 632-6470, SliceOfVegasPizza.com. Dishing: Pappardelle with Veal Ragu, Joe Vicari’s Andiamo Italian Steakhouse

This Detroit transplant found its home, fittingly enough Downtown at The D, bringing with it classic Italian fare and an old-school dining sensibility. The fresh, house-made ribbons of pappardelle pasta are a great anchor for the rich, velvety ragu of veal, tomatoes and mushrooms. Sharp asiago cheese on top punctuates the dish. $28, in The D, 388-2220, TheD.com. Read more »

Dishing: Sticky Toffee Pudding, Gordon Ramsay Steak

A classic British dessert, the version at Gordon Ramsay’s steakhouse is one of the best desserts on the Strip. Forget about your traditional American version that comes in a snack pack, and dive into this toffee caramel-soaked sponge cake. The off-white bar served on the side is brown-butter ice cream, but tastes as decadent as the stick of butter it resembles. $13, in Paris Las Vegas, 946-4663, ParisLasVegas.com. Read more »

Dishing: Tonkotsu Ramen, Shoku-Ya

Bachi Burger’s sister ramen shop next door features the standard ramen soup bases, such as shoyu and miso, but the silky and full-bodied tonkotsu is where it’s at. A bowlful of the cloudy broth is served with chewy noodles and slices of appropriately fatty pork, as well as umeboshi (a Japanese plum), bamboo shoots and wood-ear mushrooms. Ask to add nitamago, an egg with a just barely hard-boiled yolk, and this bowl of soup will set you right for the day. $8, 470 E. Windmill Lane, 897-0978. Read more »
