    Hangar One Vodka

    I recently put in some serious tasting time at the St. George distillery, home to Hangar One vodka, which is housed in a decommissioned naval air station hangar, and this year celebrating its 30th anniversary. Founded by a former judge obsessed with alchemically capturing the essence of California in a bottle, Hangar One infuses its vodka (most of which is made from single-distilled viognier grapes and wheat) not with the pedestrian orange, lemon or lime flavorings, but with all-natural mandarin blossom, Buddha’s hand citron and kaffir lime from trusted growers.

    Hennessy Black

    Hello, tall, dark and handsome. From one of the most respected Cognac houses comes a new, highly mixable cognac created with the club-goer in mind. Lighter in color and just a touch softer than its big brother, Hennessy V.S., Black’s aromas of fruit and white flowers give way to citrus, honey, grapes and a freshness not usually found in cognac. Try it at XS’ Sunday Nightswim in one of three sangrias presented tableside by the pitcher: Hennessy Black white peach, red berry ($200 each) and Millionaire’s sangria, topped with Moët Ice Imperial Champagne ($250).

    Bluecoat American Dry Gin

    Perhaps the best thing to come out of Philadelphia since the Declaration of Independence, Bluecoat Gin was launched in 2006 by Philadelphia Distilling’s Andrew Auwerda and partners, including his nephew, Robert Cassell, a master distiller and brewer. Philadelphia Distilling is the first craft distillery in the state of Pennsylvania since Prohibition, and it also makes Penn 1681 vodka, Vieux Carré absinthe and XXX Shine white whiskey.

    Know what you’re pouring—in this case, a bottleful of awesome firsts: Veev is the world’s first açaí spirit, is the industry’s first certified carbon-neutral spirits company, and is produced in the only renewable wind-powered distillery in the United States (Ribgy, Idaho).
